Last night was a big event at Print Hall, with heavyweight chefs Adriano Zumbo and Shaun Presland teaming up with the crew to deliver a one-off collaboration dinner for EatDrinkPerth.
Shaun Presland has over 20 years of experience in Japanese cuisine, perfecting his craft in Japan, training intensively with world-class Japanese chefs all over the world, exclusively dedicating 7 years of his career to sushi, and then making his mark on the Sydney dining scene as the Executive Chef at the distinctive and dynamic Sake Restaurant and Bar. He hosted a five course cross-cultured menu upstairs at the Apple Daily Bar & Eating House, with dishes like Manjimup Martin tails, tosazu & daikon salad and Skull Island prawn tempura, blood lime, local salts & butter ponzu.
Adriano Zumbo was the other household name involved in the one-off collaboration dinner. One of Australia’s most celebrated patissiers, Adriano has been sweetening us up since the opening of his first shop front in 2007, as well as bringing macarons and the impressive heights of the croquembouche to dizzying popularity via the first series of Masterchef Australia.
In the Dining Room the Print Hall kitchen served an entrée and main as anticipation mounted for what was to follow – a four course Adriano dessert extravaganza. Nostalgic desserts have been trending of late, and a highlight of the evening was the ‘adult version’ of Ribena – a gorgeous dessert made with black rice, blackcurrant, liquorice and hojicha tea. French fries even made an appearance in one of the sweet courses.
