Island escape in Collingwood


The Robert Burns Hotel in Collingwood was home to some very satisfied guests on Tuesday 24th June, following a culinary trip to the Canary Islands of Spain! The event was part of the Dine the Spanish Regions series, which the Robbie brings to Smith Street once a month. It’s a unique evening for guests, featuring four courses of amazing regional cuisine with matched wines, topped off with an education about the traditions, cultures, folklore and of course the food – of a particular corner of Spain.

The sold out Canary Islands dinner was quite an anticipated one for Robbie’s manager, José Ortega – he grew up there! The favourite course of the evening was the entrada (entrée) of Ensalada de bacalao confitado – a confit cod salad with avocado, papaya and mojo verde. The chef’s special mojo verde was even included on a postcard for diners to take with them to try at home. Diners were happy to spend the evening at the Robbie in the warm and inviting dining room. A flickering fire and the Spanish island cuisine provided an escape from the cold and windy winter’s night.
