Give a Fork! about waste

Give a Fork! is a cheekily named initiative from the good folks at Sustainable Table, who are all about educating the masses about food – where it comes from, and how can we buy and eat it more responsibly.

This October, Sustainable Table invite you to Give a Fork! about something close to their hearts (and bellies). This year the focus is waste. Specifically – less waste. You can support the cause at FOUR of CLG’s venues this October – Lamaro’s, The Botanical, Bimbo Deluxe and Lucky Coq are all involved! The restaurants’ chefs have created special, sustainable and waste-free dishes that will be on their menus for the month of October. What’s more, for each dish sold, a portion of the profits will be donated to Sustainable Table’s cause.

Bimbo Deluxe and Lucky Coq have created a pizza that uses abundant, in-season ingredients, with beetroot as the star – and $1 from every pizza sold goes to Give a Fork! The Bot has devised a pork and kimchee number – Crisped free range pork jowl, house made kohlrabi kimchi, coriander, fried shallots – using a ‘low-waste nose-to-tail philosophy’. Each sale of this dish donates $2 to the cause. Lamaro’s are using vegetable and fish trimmings in the making of their Octopus carpaccio, saffron risotto and steamed mussels, and will be donating a generous $5 from every dish sold to Sustainable Table.
